Zone of origin: South Sakar Mountain, Shishmanovo
Climate & Soil: Transitional Mediterranean climate, with long hot summer and mild winter, no ground frost. The region has one of the highest values of sunshine for Bulgaria. Sandy-clay and maroon soils with good permeability and structure.

Harvesting: hand-picked, 14 Oct – 21 Oct 2011
Training System: low trained double Guyot
Average age of vines: 8 years
Yield per hectare: 35 hl/ha
Bottles produced: limited lot of 4 947 bottles x 0.75 l
Alcohol content: 14.5 %
Winemaking process: grapes are manually selected and sorted before crushing. Cold pre-maceration, temperaturecontrolled
fermentation in stainless steel tank. Minimal technological and enological interference is applied and no filtering before bottling.
Aging: 14 months – 50 % in stainless steel & 50 % in new French 225 L barriques
Refining: 6 months in bottle before release
Colour: very dense, garnet red colour
Perfume: attractive, juicy aroma in the nose with ripe black cherry, sweet herbs and cocoa.
Flavour: a thick and firm body with velveteen ripe tannins. The final taste is balanced and long-lasting showing a potential for aging (2013-2018).
Serving Recommendations: winged game dishes, turkey with rich sauces, chicken with herbs
Serving: 16-18 degree C
