Winemaking process: We selected the grapes of best quality and best parameters. Cold maceration took longer time – 10 days at 8 ?C. The fermentation temperature was maintained within 25-26 ?C. Pos-alcohol maceration: of T ?C= 31-33 ?C for 14 days. Aged 12 months in new French and Bulgarian 225 l barrels. We blended after the aging.
Ageing: 12 months in new French and Bulgarian barrique
Refining: 42 months in bottle
Colour & Type: intense ruby color
Aroma: fruity nose with well integrated components of mature black fruit combined with hints of iodine and eucalyptus

Flavour: classy wine with a powerful body and serious structure
Serving Recommendations: seasoned yellow cheese, game meat, duck, steamed or roasted lamb
