Region – Thrace, Bulgaria
Climate and soil type – The region is characterized by a continental climate and warm and dry summer with consistent rainfalls throughout the entire vegetative phase. The winter is mild with no ground frost. The clay and maroon soil types are rich in active carbonates and have excellent structure which is exceptionally suitable for growing red wine types such as Merlot, Cabernet Sauvignon and Syrah.
Harvesting – Selective manual picking – the sugar content does not exceed 25% while the average yield amounts to 6500 kg per ha.
Production process – The wine is produced through controlled fermentation in a fermenter with a mechanical press for the pomace.
Type – Red, dry wine. Residual sugars are up to 4 g per l.
Wine Characteristics – This wine has a distinctive intensive ruby colour with lustrous brilliance. Its aroma is complex, massive and in the end – delicate and fascinating. The well marked fruity character is complementary to the vanilla
and cocoa nuances. Its taste is very delicate , smooth and balanced and creates long-lasting fascinating aftertaste.
A dish to pair – This wine pairs well with marinaded veal, baron of beef with broccoli, grilled duck breast, mallard, sausages, mid-aged soft cheese.
Serving – The wine is served cooled (18 ‘- 20′С).
